Honey Glazed Feta Salad With Garlicky Lentils And Sweet Potato Wedges
In today's post i will be taking you through another recipe that I recently am crazy about.
Cherry Plum Tomatoes
Preheat your oven to 200oc. Chop the sweet potato into 1cm wedges. Put them on the baking tray and drizzle some oil over them. Season with a pinch of salt and pepper. Roast on the top shelf of your oven until crispy and golden for around 25-30 mins. Turn half way through cooking.
Halve , peel and chop the shallot into pieces. Halve the cherry plum tomatoes. Peel and chop or grate the garlic. Slice the feta cheese into long rectangles. Drain and rinse the lentils in a sieve.
Pop the tomatoes on one half of the tray along with the feta slices on the other side. Drizzle oil and season the tomatoes with salt and pepper. Cook for 15 mins. Place on the middle shelf of the oven.
Heat a drizzle of oil in the frying pan on medium heat and add the shallot. Cook, stirring frequently until soft for around 4 mins. Add the garlic and cook for 1 min. Tip the lentils into the pan along with some salt and pepper. Stir well for around 3 mins then remove from the heat.
Pour the olive oil into a bowl and squeeze the lemon juice. Season with a pinch of salt and pepper and whisk together with a fork. Once the wedges, tomatoes and feta are cooked remove them from the oven. Turn on the grill to high. Add the tomatoes to the lentils along with the lemon dressing. Squeeze honey over the feta and pop under the grill for 2 mins.
Spoon the lentils mix into a bowl on top of a handful of rocket. Place your wedges and feta on top and sprinkle the pomegranate seeds over the top.
